Peru Paco comes from the Finca Paco farm in the Jaén district, Cajamarca region of northern Peru, a celebrated area for high-quality Arabica cultivation. The farm is managed by smallholder producer Paco family farmers, who apply meticulous care to their crops grown at 1,750–1,950 meters above sea level.
Cultivation & Environment
The coffee is cultivated in a pristine high-altitude environment with volcanic soils and abundant rainfall. These conditions allow the cherries to ripen slowly, concentrating sugars and enhancing complexity in the cup.
Processing
Peru Paco is naturally processed. The ripe cherries are carefully hand-picked, then dried on raised African beds for up to 30 days, depending on the microclimate. This slow drying process preserves sweetness and enhances fruit intensity, yielding a cup with remarkable depth.
